Healthy Recipe For The Best Peanut Butter Cookie
This sugar-free, gluten-free peanut butter blossom cookie is sure to be a huge hit among the rest of the holiday cookies!! This healthy cookie has the consistency of a typical peanut butter cookie and is made with just nine healthy ingredients. The chocolate is in a holiday shape and is a larger piece that compliments every peanutty bite. Nothing goes together quite like peanut butter and chocolate!
Peanut butter blossoms have been a staple holiday cookie for our family. For many years during our cookie baking, we would make traditional peanut butter cookie with chocolate kisses. As we began our health journey, we started trying cookie recipes with alternative ingredients. We finally found the perfect combination of guilt-free ingredients to make a peanut butter cookie that mimics the traditional cookie taste.

Ingredients
- 1 cup organic peanut butter
- ½ cup unsalted butter, softened
- 1 cup Swerve granulated sweetener
- 1 egg
- 1 cup almond flour
- 1 tsp baking powder
- ½ tsp sea salt
- 1 cup of Lily’s 55% dark chocolate chips (Stevia replacement for sugar)
- ½ tsp coconut oil
Chocolate Instructions
Prepare chocolate ahead of time.
Combine the chocolate and coconut oil in a microwave safe bowl. Microwave one minute and then stir. Continue microwaving and stirring every 30 seconds until melted.
Carefully pour the chocolate into the silicone mold. Use a toothpick to move the chocolate into the corner of each mold.
Place in the freezer for an hour before placing on the warm cookies.
Peanut Butter Cookie Instructions
Preheat oven to 350 degrees.
Line a cookie sheet with parchment paper.
Blend the softened butter, sweetener, egg and peanut butter together with an electric mixer.
Mix the salt, soda and flour in a separate bowl. Then, add to the wet ingredients and mix completely.
Form a tablespoon of dough into a ball and place onto the cookie sheet. Press with a fork to make crisscross design.
Bake for 10-12 minutes.
After removing from the oven, let sit for 3-4 minutes.
Move the cookies to a cool cookie sheet and place the chocolate pieces onto the cookies pressing down gently so the chocolate begins to melt into the cookie.
Rest the cookies in the freezer for 10-15 minutes until the chocolate has hardened.
Store the cookies in an airtight container.
